I was hoping to get some advice. I am looking for a fast touring boat for long distance straight line paddling in relatively calm water. (typically Chesapeake Bay 3 foot chop)

I was considering in no particular order:
Yukon, Razor Billed Auk, Expedition Single, Aleutesque, and possibly a Pax 20 or Hawk SS. Also looked at some of Bjorn Thomasson’s designs.

I am about 6’3, 190lbs with size 12 shoe and fairly experienced. (I am very confident paddling a Petrel in fairly rough water.) I was looking for something fairly comfortable for full day paddles, and would like to carry some amount of gear.

Any thoughts?

How much (maximum) gear/food/water capacity do you need?

How fast can you paddle? A longer (more wetted area) boat can be harder to move (less efficient) at 3.5-4 knots than a smaller/shorter boat.

How challenging do you want the building project to be?

Do you normally paddle in shoes (sneakers/watershoes) or neoprene footwear?

I'm happy with my Thomasson Panthera, but I'm not sure it would suit your Sz 12 shoes.

It has a LOT of gear capacity (though I need to resist the temptation to completely fill the (high volume) bow compartment with anything but lighter gear). I did a short trip in the Panthera but took food and water for a 6-7 day outing (and some spare gear - extra sleeping pads, neoprene & splash jacket + drysuit , used a large tent, etc. ) and it did just fine.
