I think the only solution for me are those deck mounted rudders that flip down

With regards to reliability, I would take a skeg over a rudder. A rudder has a bunch of moving parts that are all prone to failure.

Offsetting the skeg to one side makes a very big difference in the likelihood of jamming. Even launching from sand beaches with the stern sitting on the beach it is very hard for an offset skeg box to dig up sand.

A keel mounted skeg is ideally designed for digging a groove into the beach, where I regularly do sandy beach launches into surf with my offset skeg and have never had it jam. The slot cut into the relatively flat surface of the bottom slides over the beach without digging up sand.
