Hi Jack,
First things first, most designs are much more stable than you'd think when you first sit in them. Sit in shallow water in the boat and lean it, see how far you really can lean it over before it becomes truly unstable. Then you can relax and just paddle it. If you're in shallow water and tip it over, so what, you just fall out and get wet.
