Thanks for the insights on the keel idea; I'll ditch that one, then.

Assuming you are thinking of gluing it on the outside of the hull just below the sheer line, you would get some increase in secondary stability. Essentially you are just making the boat wider. Wider kayaks are more stable.

The latter is what I meant: on the outside of the boat, just below or along the edge where the hull and deck join, to prevent tipover at the last minute. Basically like a sponson, versus an outrigger. This way I don't have to make the two booms and whatever contraption to secure them in the cockpit. I can just glue (or dare I say it, even velcro) the two foam sponsons or crab floats to each side. I figure they will also allow me more freedom of movement when turning than outriggers would, in that I could still lean to either side up to a point.

If the foam is like a sponson, above the water when sitting level, the initial stability would not be changed. The kayak would still feel tippy, but when you started to capsize, the foam would provide some support. This may stop a capsize if there is enough foam. ...

That's exactly what I'm after; I'm used to low initial stability, which is why I never get in my Coho from a dock, just from a ramp or beach, so I can straddle it and then lower my rear into the seat. All I'm trying to do with the foam is to prevent actually tipping over and capsizing while under way. Thanks again for all your time/expertise.
