Thanks to everyone for the responses, they've cleared up lots of questions, including ones I hadn't thought about!

I'm going to go with Fibreglass inside and out, and will stick to doing the outside first (and put in spacers when I remove it from the forms!)

Hopefully I'll get to it before it gets much hotter, currently a nice warm 31c (87f?) maximum, so pleasant spring weather, if it gets much hotter I'll have to consider trying to cool the shed a little!
