For me I plane all the boards to slightly under 3/4" so they have consistent width over their length when cut to strips and I cut lots more strips than I need for the boat, usually 2 or 3 times the number required so I can pick and choose the right strip for each place on the boat. Yeah it's more expensive that way, but I can always find a use for the extra strips.

I also keep my eye open whenever I'm in any lumber yard, you never know what you'll find and when. I once found a whole pile of discounted cherry house trim because it had unwanted figured wood in it (apparently for house trim plain looking is better). I've used that sparingly because of the weight in boats, very pretty varnished.
