How tall are you?
I'm just 5'9" and I use the adjustable foot board Nick Shade designed in his original book.
I find it much more comfortable than pegs although it will not get you that final 1" of extra length with your intention.
This is a picture during construction with no skin. You can see the #2 frame to the right and #3 frame to the left.
This setup lets your feet naturally point outward to the gunwales with your heels along the centerline. This can be adjusted until the foot board hits the #2 frame, so it might actually have the same length as your flat bulkhead.

Just a thought, I have moved bulkhead positions on one of the 15' by about 1.5 inches, toward the bow (#3). This was an attempt to get a longer cockpit. Since you already have the boat built you might be able to take measurements off the boat (after you remove the skin, sorry) and put in a new bulkhead to get more foot room.

I actually have a 15 de-skinned and could get a better picture of the finished system showing the adjustable feature - not shown in the construction photo shown above. Let me know if you are interested.
