If you're going to be building relatively quickly after the lofting process you can relatively inexpensively buy roll paper for plotters that'll allow full size lofting. Otherwise if you have the space you can loft full size on drywall very inexpensively and it's a bit more stable to temperature and humidity changes than paper is. You can do many kayaks full size using one sheet of drywall split length wise, used end to end.

Of course then you'll need long battens, good way to learn the correct way to scarf wood and helps much to have lofting ducks (lead weights to hold the battens) I cast my own but that was back when wheel weights were often used on cars and shop gave the old ones away. You can use push pins on drywall to hold battens too, little cheaper than buying ducks.
