I have used 207 many times for outer hulls and decks. I like 206 or 205 for the insides as it is less money.
I use only West and only tried another brand once and had bad luck. I don't remember the brand as it was an off beat maker and not one of the larger producers.
Never have any trouble but I can control the temp and humidity closely. Wets out nice though I usually warm the resin in a bucket of hot water.
Previous comment about other West hardeners getting cloudy does not make sense. You have to varnish any epoxy coating to prevent clouds. I have used 205 and 206 on the outer hulls several times and never had any clouding. Have to check my records but I am up to 19 or 20 kayaks so I have used quite a lot.
