No it shouldn't, just like epoxy it's a chemical reaction when curing, if polyester (any of the esters for that matter) are properly catalyzed and mixed it should completely cure with no residual odor. Polyester sets up really fast, like 10-15 minutes to initial cure, so those laying it up tend to rush the mixing job, bad form.
