Another vote for rolling bevel. I also made the first strip over (actually under, since we build the hull upside down) the last strip parallel to the sheer, and then filled in from the keel outwards parallel to the keel:

Note that I actually ripped the last strip before the chine a bit narrower to exactly end at the chine.
