I think you've got to look at the Night Heron or Petrel. A lot of people think the NH is tippy, but I don't find it that way. It has a comforting amount of secondary stability to the point where it feels more stable as it gets bumpy. I have not paddled a Petrel, but they say it is more stable. They are very similar designs. Personally I wouldn't want to give up on the speed advantage of the NH. It really is quite quick.

Here's the rub: The NH is really designed for a 90kg paddler. Mine paddles much better when I weigh 90 than it does when I weigh 83-85. I know enough people who carry ballast to say that it's not unusual, and I am planning to do the same when I paddle open water this year. I built my kayak with a bulkhead hatch behind the cockpit, so I rigged up system to attach a small weight from a weight lifting set there, just behind the seat but in the rear compartment. However- it's one thing to compensate 5kg, and another to compensate 20kg if his weight really is in the 70kg range. He may not know the difference- throw in a skeg and tell him they're all like that. But- it's in the bumpy conditions that I notice the most difference.
