Epoxy is the standard for sealing plywood edges, not sure why you don't like it, it is expensive. Heavy oil based paint will work, but that's becoming a bit difficult to find. The epoxy likely won't like the previous coating of linseed oil and getting the old oil off plywood edges is a waste of time, won't happen. Perhaps Tung oil or one of it's blends or Watco oil will work.
