You have to define compressive failure of what.

The illustrations you have are for compression of the overall panel in the plane of the skin. This only happens on the top of the kayak because of the weight of the person bending the whole boat.
This discussion is about a load from the side of the skin, I believe.

If you look at the "wrinkling" illustration on the right, and ignore the loads at the top and bottom of the section, that looks like an impact which has deformed the outside skin (right side) compressing the core across the grain.
The only thing not shown is that the panel will be bending to the left (unless the core is useless).
The bend will put a tension on the left side skin.

Push far enough and the left side skin will break.

The more the core crushes, and the deeper the dent from the right side skin breaking, the higher the load on the left side skin will be.
