I wonder if it's one of those topics that is interesting but not actually material due to the seam being so strong whichever method you use.

Yes. The best reason to use bias tape to join the hull and deck of a kayak is to make the tape easier to drape, not the resulting strength level. Knowing the details of the fiber composite mechanics is sort of like knowing if the sun revolves around the earth or if the earth revolves around the sun while rotating on its axis. Either way, who cares? But if I were to justify doing something by stating the sun revolves around the earth, I hope I would be enlightened that it doesn't.

I get the argument that fibres are weaker set at 45deg to a join than 90deg, but I wonder if the fact the fibres are set in epoxy is being missed.

No. The concepts apply to fiber/polymer composite, not just the fibers. You might like to take a look at the first three rows of data in Table 3-3 on page 120 of http://www.ericgreeneassociates.com/images/MARINE_COMPOSITES.pdf. Similar lab results are presented in most composites text books, because these are fundamental concepts of mechanical behavior. Without knowing this stuff, we can still enjoy building boats, but composite structures like Boeing's Dreamliner would be fantasy, and large wind turbines would be much less efficient. Both of those examples rely heavily on lab data.
