Corey's goop is a concrete coating, and in my opinion/experience it's not very good. Polyester does not stretch as much as nylon, so that opens up more options. The best, and by far most expensive option, is Coelan. Without doubt, if an ideal coating were made, this would be it. While goop may be flexible, it is not elastic, and I have seen it peel off in big chunks, and even on well cared-for kayaks it gets dull and shows degradation, and then just seems to disappear, leaving the weave with what could be goop inside. I would avoid the product at all costs, regardless of popularity. It's so under-the-table you can't even get an MSDS from him to know what you're actually getting. I would honestly and seriously recommend Rustoleum Marine Topsides paint. Thin the first coat and work it into the weave, then paint a few more coats. I'm happy with 5-6, but I don't think 8 is unreasonable. Follow the directions regarding film thickness and dry to recoat times EXACTLY or you will create an incurable mess. But- that goes for any coating. Its cured elasticity is greater than properly shrunk polyester, it is easy to apply with good results, and it is very cost-effective. I go over the seams and stitching holes with Lexel. It's o.k. to paint over once cured and is very flexible.
