They weren't 1/4" Cedar with Titebond between the strips (I'm assuming there)

Go ahead an double the thickness with fasteners thru the sides of the strips and you will be OK. Probably.

But you ought to do a test. Make up a panel the same way you built the boat except no glass and bump things into it. I recently built a flag box out of cedar, and had to repair it multiple times before I got it finished. The cedar is so soft it was a very poor choice just varnished.

Have you had a reaction to the Epoxy (toxicity)?
Thirty years for me with reasonable precautions and I have never noticed an issue.
