Boats that are built without epoxy are built differently.
I never tried strips without epoxy but considering the physics of such construction, the strength will only come from the glue in the seams and that doesn't look like enough strength, even if you use 2 layers (with different direction strips).

You don't have to bump a boat against a rock to break it. The boat might (and probably will) hit stones and sand when you launch/retrieve it, and it will have a lot of force on it when you secure it on your car's roof rack.

I totally respect your attempt to avoid epoxy. I've heard it before.

SOF's have very little epoxy or none at all, depending on the specific method of structure one choose, and they are plenty strong.
