You can also scribble pencil all over the surface, that will be an indicator if you are developing high and low spots during fairing, if it's really messy and you need to resurface the whole length.

If you wanted a 90° sanding tool, make a fairing board like Jay says, just glue up another strip 90° on the edge. Or whatever angle you need. But the length of the fairing tool is what will help you keep it all level, freehanded.
