Well I'd certainly cover the boat, while the sun isn't as strong in the winter UV damage does still occur. No chance of water expansion freeze thaw issues, that's only a problem if the water is contained where it's expansion causes breakage, both the interior of the boat is open and empty as well as a flexible cockpit cover preventing that from happening. Mice are amazing at places they can get.
