I am going to venture that it probably will be OK. Skin boats have an advantage in curing thicker coats I think, because the backside of the surface is open, which is totally an assumption on my part, I stand to be corrected. I guess the coating could "skin" on both sides, and still not be cured in the "middle"...
Anyway. I have used exterior latex enamel, regular house paint, on my son's SOF covered with duck canvas. It soaked up a LOT of paint, and we launched it as soon as it was dry enough to handle. Gosh, that was more than ten years ago now, but I recall I coated it in the last half of the week in a hot hurry, and we took it to the water that Saturday for a group paddle. The paint was still soft, judging by how the straps marked into it on the roof racks, and after being in the water a couple hours, it was even softer putting it back on the roof. (soap and water clean up paint)
But the following week, it finished curing, sitting on the kayak rack, and was fine after that.
So if your paint is still soft, I'd be careful about abrading it on the ground, but it should be OK in the water... hopefully?
