The Glass/wood/glass sandwich of a normal strip build requires the core to have sufficient structural strength to hold it's form.
Foam of any type is largely air space, and as such is far more likely to suffer mechanical failure than WRC etc, so IMHO, the resulting craft would be corespondingly weaker and prone to failure, especialy with high local stresses.
