If you have not paddled much, and have never built a kayak before, and you are determined to go in a novel direction, you are almost 100% guaraneed to end up with a lemon.

Buy the plans, or get the kit, and follow the directions to the T is my advice. That way your first boat, while it may not be perfect with a magnifying glass inspection, will still be more beautiful than anything you can buy off the shelf, and it will behave properly in the water.

I agree.
Even if 'following directions' you can easily end up with a boat that's uncomfortable to paddle (like the old 'deck beam CLC designs) or unsafe (like the majority of S&G and strip boats you see on internet images) because it lacks decent end toggles and perimeter lines.
So, get all the input you can from experienced paddlers.
My first kayak build was not very good (poorly outfitted S&G boat, too heavy), and the second -though 'beautiful'- didn't meet my paddling needs. The 'learning curve' can eat up a lot of effort and money.
