With all the input you have had, its time to set up some forms and build a couple of test sections.

I agree.
You may be surprised (I was) at how stiff and strong a thin (either 3mm plywood or 5mm cedar/spruce) wood core composite can be. You'll probably also be surprised at how reluctant even thin plywood is if you try to bend it in two dimensions ('tortured').
Be sure to compare epoxy fillets with wood sheer clamps (stringers) as well.
There are 'free' plans out there - Nick's S&G Guillemot for S&G and I think that some of the Siskiwit plans by Bryan Hansel are still online, and they are a good example of a 'curved' (Romany-style) boat shape. Certainly enough to build a few feet of boat for experiments..which I don't think either designer would mind.
