Skin-on-Frame: Which way to bend stringers/gunwale *PIC*

beginners question. I have some Eastern Red Cedar boards that used to be in a sauna I took apart. They are 3/4 inch thick and, after rippi ng off the tongue and groove, about 5 inches wide. Thinking of ripping them and scarfing them into stringers, gunwale and keel for a yost style construction.
Question: which way do I bend them, with the plain grain or quarter grain facing outboard. Picture clarifies what I mean.
