I agree, the easiest way is to just add an inch to the sides all round and lengthen the stem pieces a bit.

What I prefer is to add the inch in the bow, reducing it gradually from about the shins to the point where it is running into the rear deck, as originally designed, about a foot behind the cockpit.

Of course, one can reduce freeboard in the same way.

Unfortunately, the designs on which one may need to do this deck heightening are usually greenland paddle friendly designs, and raising the deck is not what one really wants to do. Still, it is usually the taller guys who need to do it, and even with their extra arm length, they have a bit of leeway.

I've noticed recently, a quest for Vertical cutaways in the knee sections of boats to facilitate strong overhand racing strokes. My quest, since converting almost completely to GPs, is for a lower deck. The width is not really an issue any more.

While we take intended use, conditions etc into account, I have come to think the choice of a kayak design these days hinges more on paddling style than it does on any one other single criteria. Of course, for a beginner, who does not yet now what their paddling style is, that is not much help.
