The wood strips, while they do provide strength that other cores don't, are basically a composite core, keeping the fiberglass skins attached yet separate. The individual strips are not structural like in a conventional wood boat. So butt joints are fine. Lots of builders use scarfed joints but as mentioned usually do it on the raw board before it's cut into strips, lots fewer chances of failure with many less joints to make.

I too use butt joints also with a scrap piece supporting the back to get a fair curve.
