You are going to do a lot of sanding to get the surface fair, both inside and outside.
Outside is easy and quick, but if you have a joint that peaks on the outside, you have one that "dips" on the inside.

To sand such a feature means you have to take off lots of wood to get smooth on both sides.
If you get a little carried away you can sand right thru. Then you have a really nasty repair to make, which may show up badly in the final finish.

I would also suggest that you need to pay attention to the end of each strip making the butt joint. You may want to keep as much length as possible to not "Waste" the length of strip. Resist this attitude and make sure the end of the strip is cut to remove any damage from the end of the board - like longitudinal cracks.
When I look over the hull after glass and finish, any such foolish moves show up badly.
