The easiest way to get footroom without ruining the visual lines of the boat is just add an inch to the sheer from the thigh area to the stem. Leave the rear deck and sheer as is and fair the sheer in by tapering the extra height at the sheer from the thighs to the rear of the cockpit.
ie: just extend the formers for the foredeck by an inch at the sides and extend the stem piece to suit.
