You're right! I did miss that. Can't comment on Interlux Schooner. In the past I always had good luck with Z-Spar Captain's.

For polishing (also called "color sanding") you wet sand the finish with a high grit paper (most start with 800 or 1200) and then use rubbing compounds (automotive or marine) to restore the gloss. Varnish is usually softer than most automotive or marine urethanes so it can be more difficult to polish. You can do it by hand but a power polisher speeds up the work. The upside: you'll have polishing materials to really detail your car!
