Ever notice how varnish or oil based paints never skin over on the self at the store but one you use them, they will develop a skin and THICKEN. You hit a very important point in your post mentioning viscosity. Once a can is open and the volume lowered, you allow more air into the can and the varnish thickens. Normally varnish right out of a new can is perfect for application. You have to remember that viscosity. If the varnish is just a tiny bit too thick, it will not level out well. I found better too thin than too thick. BUT you have to stir in thinner very thoroughly. if you don't you can get dull spots.Everyone's advice is on target but I have mentioned many times on this site ... there no substitute for experience. And that includes knowing your viscosity of the varnish. Varnish starts to set by time you get half down the boat. In other words, you can't go back and "tip off" the varnish back at you starting point. If its killing you and you have to tip off a spot, take a dry foam brush, dip it in thinner, wipe it off and use that.
Also varnish starts to thicken in the foam brush as you work. I take that foam brush ever now and then and squeeze it out with a paper towel to remove thickened varnish. Sounds obsessive but I too have had my battles with varnish.
I like Captains too and Epiphanes and have had my best results with them.
