Durham's water mixed wood filler mixes with water, sands well and you can color it with artist's acrylic paints.

Sanding is much easier if you clean off excess on the wood surfaces before it cures.

Epoxy is not good choice. It's harder than wood so it doesn't sand well, is a mess to work with and takes a long time to cure.

Thanks! That looks like it will work perfectly - I'm glad I asked. The sanding issue with epoxy is exactly what I was concerned about - not sure why I jumped to the conclusion that I ought to be using epoxy in the first place. I suppose it's a "with a hammer, everything looks like a nail" scenario - I've been reading up on epoxy anticipating the next step in the build, so it's on my mind.
