My thinking with the spokeshave is that its long arms (relative to the narrow width of a block plane) would make it easier to accurately bisect the angle of mating strips consistently down the length of the strip. So I'd be using the tool to knock down these "facets" down the length of the kayak, not in an attempt to fair the curve from deck to hull. Does that make sense?

I was wondering if that's what you meant. Prior to construction I was expecting more of a "faceted" effect and wondering how to deal with it, but in practice I haven't found it to be an issue on the Mystic Star design. I ran some numbers and they confirm my observations - but I'm wondering if this is a design-specific thing?

What I found was the typical bevel I needed was 5 degrees or less, and that the "corner" raised by a 5 degree bevel was almost imperceptible even before sanding, and whatever corner there was got easily knocked off by the ROS. Is that typical?

I was surprised at how "straight" each consecutive strip was and yet the resulting hull was nevertheless "curved," but if I'm doing the numbers correctly 3/4" strips with an even 5 degree bevel would form a "pipe" with an 18 inch diameter - a pretty tight curve. A worst case kayak design might be a flat bottom and sides with a 90 degree bilge, but you could get that with about 11 strips at a 9 degree bevel - that would be a noticeable "corner" but still only about 1/16" I think.
