Nick - You can empty a boat in seconds by grabbing the bow, sliding it up on your coaming, and flipping it. You don't need to bring it far up, just edging your boat will be plenty.
If you think you can empty a plastic sea kayak with the bulkhead way back from the cockpit rim, a lot of people would like to know how. Just lifting the bow doesn't do it so it might as well be emptied by the rescued paddler, warm them up doing some pumping. 10 seconds of pumping? I'm talking a decent pump.
A plastic kayak, 30 kg. On a trip, +20 kg? You now have to lift 25 kg that's off to the side of your kayak. Drag it on to the cockpit rim? Doesn't help the sprayskirt much, usually damages it (ask my partner about that damaged sprayskirt during instruction, not by me). Drag it on to the foredeck? How far forward can you actually reach while lifting?
When I recover the inverted kayak I grab the bow and hopefully the person in the water, aft of the cockpit will press down and pull the kayak towards them, rolling it up as I lift and help roll it. That parallel bow lift and roll is as good and much faster than a T lift. The person in the water, aft of the cockpit, now needs to lift a leg up into the cockpit (heel hook) and grasping the decklines (we were originally talking decklines) pull themselves on to the deck and slide, Face down, Feet first, Facing aft, into the cockpit - FFF.
Note there is no rescuer holding the slippery plastic cockpit rim with cold wet hands as is so often shown in YouTube videos. Arms are hooked under the fore decklines, lines in the crook of the elbow. Release by flinging the arms straight.
Another thing instructions tend to say, "must have the kayaks facing in opposite directions". No. Once rescued and then to do a rafted tow, both kayaks facing the same way. It is easy enough to look over a shoulder or even reach back to give assistance if needed.
Pumps - some swear by electric pumps. Having dealt with electrics and electronics all my life, unless there is rigorous routine maintenance I wouldn't trust them. Hand pump - a good litre and a bit per stroke capacity type.
