I think you will find that polyester is both easier to skin with, and easier to coat. Polyester heat shrinks very well with just a clothes iron, so one doesn't need to stretch it particularly tight while skinning. I think one of those skinboat videos shows him pulling the nylon skin with both hands, pushing against the frame with both feet, and straining mightily. None of that is needed with polyester (8oz is what I typically use and recommend).

Polyester fabric can also be coated very effectively with any oil based paint or varnish. In North America, Rustoleum, or Ace Hardware brand "Rust-Stop" paints work great and are very inexpensive.
