Eight ounce or heavier polyester is plenty strong enough for a kayaks skin and does not require covering with fiberglass. If you were using ultralight aircraft fabric - which is under 4 ounces - covering it with glass would be necessary if you want any real durability.

I've used both fabrics and won't use Nylon again.

Unlike Nylon, polyester accepts pretty much any kind of finish and it doesn't expand and get loose when it gets wet. If you don't pull Nylon really tight when skinning, your boat will look like a raising when it gets wet. If you wet the material while skinning, it will shrink tight, but if you pull it too tight when wet, it can shrink enough to damage the frame. Only oil-based or two-part finishes adhere reliably to Nylon, which limits your choices.

Overall, polyester is the more versatile choice and it's much easier to use.
