Don't do it with polyester if you can go with nylon. Polyester is easier to skin with, will result in a tighter finish, but has probably 1/3 the strength of nylon against puncture. If you skin properly and use mechanical techniques to tighten the skin as you go, you will get a tight nylon skin that requires no heat and is far more durable and strong. Only reason to go with a polyester skin is for specialized kayaks that want to race, roll, or for kayaks that you are willing to baby. The very last thing you need is to be reskinning your kayak after accidentally putting it on an errant bolt on a dock, or to be high centered on a rock and then rip a large tear. Nylon easily can handle these common situations.
