S&G: Staining the Okoume

Hi All,
I'm wondering if there's a good reason not to stain the assembled pieces of the hull or deck respectively. Nick stains a completed hull and a completed deck in the strip videos. Ideally, I'd like to do the same with the S&G boat. The hull will be one stain and the deck will be another. If not I'd at least like to join the full length pieces and then stain them in full lengths. Any reason to avoid this? Nick says "generally" you'd want to stain each piece first and then join them. Just curious.
