My thought is,
1. Let wood dry out, sand area thoroughly
2. Cut 2 or 3 layers of fiberglass for patching
3. Fill void with epoxy and lay in patches. Wet out fully
I'd just do steps 1-3, for now. If you put a piece of clean plastic (cut from a freezer bag, or heavy vapor barrier plastic) over the patch(es), you can get a fairly smooth surface result. (Just peel off the plastic after the epoxy sets up hard.)
You can work on the cosmetics later- go paddling! :-)
