I did what you are saying, had a white oak tree trunk cut into boards in the field, I took home all that would fit in my truck.

It will not warp, twist or crack on you after bending. Bends like butter when wet. Dries hard and stays still.

I did make my Masik from it, and I have not got a hernia from lifting the kayak. You could use it for thwarts unless you are looking for every gram of weight saved.

Be careful to skip the pith wood at the edges of the planks. I only got seven or eight inches of usable bending stock from each plank that was 12" or so wide.

Red oak is terrible for boat building. Stand a chunk of that beside white oak, on the grain edge in a pan of water and you'll see what I mean. Red oak is like a sponge.
