Well, as an example I've built several Yost Sea Bee designs for classes all using WRC for all the long parts and once made one using western pine which is somewhat heavier than the cedar and it added about 10 lbs. to the boat. Oak if not thinned considerably can double the weight of the boat.

That said my first kayak, I was like 10 years old, was a SOF with very thin, like 1/4" thick ribs and stringers like 5/8" square and while flexible it paddled great and it was like 20 years old when I got it, I sold it after several years, last I heard it was still paddling. It was fairly light, certainly not as light as it would have been with softwood.
