I'm assuming this is one of the round fg/nylon fittings with slots to run the lines: http://sealectdesigns.com/groups/1111-kayak-deck-line-guide-slotted-round

Drill a hole larger than the SS bolt you are using (you will likely need a slightly longer bolt than the one provided with the fittings), tape the bottom of the hole and fill it with epox. After it cures, redrill to the size of your bolt -- this will leave a ring of epoxy to protect the wood.

Varnish the boat.

Attach the deck fittings with a SS bolt through the fitting, and on the inside a SS washer and locknut.
Put a little marine caulking (BoatLife or something similar) in the hole before assembling... it should squeeze through the hole and coat the inside of the washer, providing a good seal.
