In my experience the fit of the cockpit has a greater bearing on being able to roll a boat than the type of kayak. Although what everyone else has said about wetted surface, more boat to roll, etc... is all true, if you can't brace your feet and knees in the boat you are going to have a tough time getting a good hip snap, which is a crucial part of success. Many many commercial sea kayaks have extra large cockpits that are too big for even the most bow-legged cowboy (the selling point appears to appeal to those people who fear "getting trapped" in the cockpit should the boat flip). I would guess that the greater width of many commercial boats also makes it more difficult.
Although looking at diagrams is helpful (use the site mentioned earlier, or buy "The Bombproof Roll"), nothing beats someone helping you learn. Good technique is crucial, it is possible to succeed in rolling but expose your shoulders to great danger. If they start to hurt when you are practicing, then change your technique (usually pull your elbows into your body).
