I go with just tung oil - with enough coats to build up a nice satin sheen. I don't like the look/feel of high gloss. It's too slippery for my liking.
I think you'd have to put on a fair bit of epoxy before you get much in the way of dent resistance. But then again, if you paddle gets dinged, then so be it. It's just like you boat - at some point you're either going to ding or scratch it!!
I look upon the finish as mostly a way to keep the water from soaking into the paddle and, in the case of oil finishes, to bring out the natural beauty of the wood grain.
