this is probably to cumbersome but: Assuming a typical yak, that one set of say keeper footpegs could fit you both. So buy 2 sets of keepers and install them one over the other say 1/2 in apart. Use the lower set as is for footpegs for you both but completely remove the flexible key in the top one.

Make the rudder cables a continuous loop from the rudder to the front bulkhead, pulley (or whatever) across front bulkhead , pulley then threaded to the rudder other side. And the 'cables' in the cockpit around the footpeg area would convert from the ss cable to say 1/4 in woven (nylon?) rope.

In the top set of now sliding(good enuf for now - maybe extend base a bit later) keepers (sleepers? weepers? dekeepers? sleeders? sleezers? wobblers? doublers?), drill a 3/8in diam hole vertically down thru the foot peg, if theres room maybe one behind the other and put in one or two barrel clamps(50c each). Thru the barrel clamps goes the rope.

And so now it's realy easy to set you foot length for the pegs and then push down the barrel locks and slide the top peg so it aligns and has toe action.

Then down the line, remove the top one for the next yak and on the lower pedal face a door hinged flapper (say like an open door hinge-but plastic) on the pedal face(hinge horizontal), bungee it, and put the barrel lock on the top of that.
