Double diamond shape is traditional and works fine. To me it's a pain to carve. I instead do a single diamond, do that shape on the power face and round over the back side, funny thing is when you're using it it's pretty hard to tell the difference but the diamond shape is very slightly more stable. This saves 1/2 the drawing on the paddle blank btw.
