We use DuPont ChromaPremier 72700S. It's a higher-end three component urethane designed for refinishing. It isn't cheap: about $300 for materials. For an $8000 kayak the material costs are pretty insignificant. You don't have to use the "good stuff." Just about any urethane-based clear coat will work. They naturally all have adequate UV protection for vehicles. cured epoxy is pretty much inert. It'll take about anything. A lot of primers are epoxy-based for a reason. Stay away from the lacquer-based clears. The best advice is to talk to your sales rep. They'll point you in the right direction. Also, don't forget to add some flex agent.

"According to [Pete's] DuPont rep/distributor, there’s several boat builders, including one in Vermont, that are using it with excellent results. It came very highly regarded. The DuPont rep said there was one product that would be even better, an industrial marine urethane. He said it be bullet proof on a kayak. We didn’t use it for this boat because it’s supposed to be quite thick and isn’t made to be leveled and buffed. We may try the industrial urethane on the next boat. He added a flex agent for better abrasion resistance. Without it dries very hard and is prone to scratching. The flex agent gives it more give."
